This remote town is famous for its hanging coffins and limestone caves, but for coffee lovers, it is the home of the legendary Sagada Arabica. Grown at elevations exceeding 1,600 meters, the coffee trees here benefit from some of the coldest temperatures in the Philippines, resulting in a dense, flavor-packed bean that is highly coveted by roasters worldwide.
The coffee culture in Sagada is deeply personal. Unlike large plantations, Sagada coffee is grown in "backyard gardens" and small forest patches where the trees are shaded by towering pine trees. The farmers, belonging to the Kankanaey indigenous group, have cultivated coffee for generations, often passing down specific heirloom trees as family legacies. Because the terrain is so rugged, every stage of production—from hauling organic fertilizers up the slopes to carrying sacks of cherries down—is done by hand.
The Sagada profile is defined by its complexity. The cold mountain nights slow down the maturation of the cherry, allowing a distinct acidity to develop. Most Sagada coffee is wet-processed (washed) or honey-processed using pristine mountain spring water, then sun-dried on wooden racks.
